Make homemade ice cream

Impress your friends and family with homemade ice cream this winter. They’ll never guess how easy it is!

Recipe for Vanilla Ice-cream
300 ml milk
250 ml whipping cream
2 tsp vanilla extract
4 egg yolks
80 g sugar

Put the ice-cream maker bowl in the freezer at least 8 hours before you want to make the ice-cream.
The colder the mixing bowl, the quicker the ice-cream will be ready.



Step 1
Mix the vanilla, milk and whipping cream together in a saucepan. Simmer on a low heat while stirring but don’t let the milk boil.

Step 2
Whisk the egg yolks and sugar until light and fluffy. Pour in the milk and cream mixture and combine well. Leave to cool outdoors or in the fridge for four hours.

Step 3
Pour the mixture into the frozen mixing bowl. Start the ice-cream maker and let it run until the ice-cream has set – this usually takes about half an hour.

Make several different flavours and freeze them in plastic containers in the freezer. The ice cream is best eaten within a few days but will keep for up to a month.

For a festive flavoured ice cream, try serving with crushed candy canes, jam or berry purée. Cinnamon is also an amazing Christmas flavour – add a teaspoon or two whilst the ice cream is churning.
